Not Low Coolant Level

I have had a couple of 'Low Coolant Level' warnings since I got the car. the first was on a long journey south down the A1 which went out after a few mins. can't remember the circumstances of the other. However when I removed the coolant filler cap I found it was full to the brim. could this have triggered a false reading? Should I remove some of the coolant to bring the level down to as it appears to be over filled?

theres a level sensor back , rear area, checked its plugged in correct

check the connections are not corroded as well
