Hello Fraser, soft pedal can be caused by - Old brake fluid, the fluid should be changed every 1 to 2 years and should be super dot 4 (wrong fluid for abs not good), as fluid ages it collects moisture and air which affects pedal feel. Damaged/worn brake hoses which expand when put under pressure causing soft pedal, rear hoses on X Type can rub on wheel rim and fuel pipe from filler to tank. Simple way to check, sit in car and start engine, press pedal 2 or 3 times and it goes firm. Fluid is easy to flush through and change, hoses easy to change, front pads easy to change, rear pads are easy but you need a special tool to wind caliper back (lucky you've had these done) All the best, Pete.
